Comments:
- This is an easy and hearty meal that Scott Locorini has served in a variety of variations on several trips. You can use red or black beans and rice, or dirty rice (available from Zatarans and others) or instant refried beans (available from Fantastic Foods).
- On this trip I brought Chorizo dry sausage, cut it into small pieces and added it to the mix for added kick.
- You will need a stove that can be dialed down to a simmer, as the beans and rice need to be simmered (not boiled) for about 20 minutes.
- Tortillas are great to take paddling. They take up very little space and they seem to keep forever (I still have some in my refrigerator, weeks after my last trip)!
- Leave no trace. You must carry out all packaging materials and garbage.
Ingredients:
- Large wheat flour tortillas
- Zataran’s Black Beans & Rice (Alt. Red Beans & Rice, Dirty Rice, or instant refried beans))
- Shredded Cheese
- Chorizo Dry Sausage
- Hot Sauce (optional)
Cooking/Serving Directions:
- Cook the beans and rice as per directions on box
- Lay out a wheat flour burrito style tortilla
- Place a scoop of beans and rice in the center of the burrito.
- Add hot sauce if desired. Add cheese, roll up and eat
