Yackman's Pad Thai


Comments: 

  • There are several kinds of Pad Thai mixes.  We used the simplest one that just contained the Pad Thai sauce and rice noodles, because it was easiest to pack.  
  • As an alternative, skip the rice noodles and use ramen noodles instead.   Ramen noodles pack and carry easily and they cook in three minutes.  If the noodles you choose are chicken flavored, you could use the flavor packet, as it would add flavor to the meal.  But it would also add a significant amount of salt, if that is a concern for you.  
  • If you want to increase the protein content, brown some Tyson or Swanson chicken cubes with some onions and add to the mix.
  • Can’t find crushed peanuts?  Check your trail mix.  Pick out a handful of peanuts, crush them with a knife blade or spoon and add to the top of this dish.  
  • This is a hearty meal that is quick and easy to prepare, especially after a long day of paddling or in rainy weather.  
  • Leave no trace.  You must carry out all packaging materials and garbage.  This meal produces very little waste.


Ingredients:

  • 1 Package of Pad Thai mix (Look in the international section)
  • 1-2 packages of Raman Noodles
  • Crushed Peanuts (optional)


Cooking/Serving Directions:

  • Bring quart of water to a boil.  Add noodles (discard flavor packet) Cook as directed.  
  • Drain and leave in pan
  • Add contents of Pad Thai mix packet
  • Stir.  Reheat if necessary.  Garnish with crushed peanuts if desired.
